One of the top rated high school QB's in North Carolina, Randy Schroeder went on to play Quarterback in College at Truman State and Ave Maria University. After graduating from college, Randy received offers to play overseas. In his first professional season, he played for the Copenhagen Towers in Denmark. The Towers won their first ever Northern European Championship and won the Danish Championship in Randy's first season playing in Europe.

In his second season with the Towers, his team won Mermaid Bowl XXXII by the score of 24-7. With this victory, the Towers hold the record for most Danish national championships (9).

In 2022, Randy signed with the Stuttgart Surge in the European League of Football. After four weeks with the Surge he ranked in the top five for passing yards in the ELF. His season ended after an IR designation following week 4.

During his third season with the Towers, his team secured a Mermaid Bowl XXXIV victory winning 50-36 after trailing by 2 scores. Randy won Mermaid Bowl MVP after throwing for 400+ yards, 5TDs, and completing 89% of his passes.

After retiring, Randy co-founded the 18th team in European League of Football history, the Nordic Storm. The Storm will play its inaugural season in 2025.
